Almond cream


Almond cream refers to an uncooked mixture of roughly equal parts butter, sugar, eggs and almond powder. Spread into a tart shell, it rises and browns during baking to fill fruit tarts, pithiviers and galettes. Combined with pastry cream, it becomes frangipane, the traditional filling of the French Twelfth Night galette des rois.
