Angel's share


The angel's share, from the French part des anges, refers to the volume of wine or spirit that evaporates through the wood during barrel ageing. This loss forces the maker to top up regularly to compensate. In cool climates like Cognac or Scotland it runs around two to two and a half percent a year; in the tropics it can reach ten percent. Its scale depends on temperature, humidity and the porosity of the wood.
