Barrel toasting


Barrel toasting is the stage where the cooper heats the oak staves over fire to bend them and chemically transform the wood. It breaks lignin down into vanillin and caramelises sugars, generating aromas of vanilla, spice or coffee depending on its intensity. A light toast preserves the wood's tannins, a heavy toast brings roasted notes. It deeply shapes the profile of a wine matured in barrel.
