Beluga caviar comes from Huso huso sturgeon eggs, the rarest and largest sturgeon species. The eggs are the largest (3 to 4 millimetres), silver-grey to black, with the most delicate texture in the caviar range. Wild Caspian Beluga has been banned from commercial fishing since 2008 by CITES, and the legal market now rests entirely on aquaculture. Main producers are Iranian Royal, Caviar de Neuvic (France), Caviar Petrossian and Caviar House Prunier. Beluga caviar can reach 8,000 to 12,000 euros per kilo in 2026.
