Berlingot
Berlingot refers to a hard boiled-sugar sweet, tetrahedral in shape with four faces, often striped and translucent. It is made by stretching and folding a flavoured cooked sugar whose coloured bands form the characteristic stripes, before cutting into small pyramids. Carpentras in the Vaucluse and Nantes are renowned birthplaces, each town claiming its own tradition and flavours. Its brittle texture and translucency make the berlingot an emblematic regional confection of France.
