Blind baking


Blind baking refers to baking a tart shell without its filling, so the pastry is cooked before adding a preparation that will cook little or not at all. The base is pricked with a fork, then often weighed down with baking beans or dried pulses over a sheet of paper to stop it from puffing or slumping. It ensures a crisp crust beneath cream fillings and fresh fruit.
