Bombe mixture
Bombe mixture refers to a base of egg yolks aerated with a hot cooked sugar syrup, whisked until they form a pale, voluminous foam. This airy preparation underpins frozen parfaits, certain mousses and bavarois, as well as some buttercreams. The partial cooking of the yolks by the hot syrup both stabilizes the foam and pasteurizes the eggs it contains.
