Borscht

Eastern European soup originating in Ukraine, its deep red colour coming from beetroot. The broth, often beef-based, combines cabbage, potatoes, carrots and a sour note, served hot or cold and topped with smetana (sour cream). Inscribed on UNESCO's Intangible Heritage list as Ukrainian culture, it illustrates the Slavic cuisine served in the palace hotels of Eastern Europe.
