The bowl shape effect refers to the influence of a glass's form and volume on how a wine is perceived. A generous bowl encourages aeration and gathers volatile compounds towards the opening, altering the intensity and order of the aromas noticed. The narrowing rim also steers the flow of liquid across the tongue, acting on the balance between acidity, fruit and tannins. This is the technical reason distinct glasses are matched to each style of wine.
