Buttercream
Buttercream refers to a rich cream built from softened butter whipped with a sweet base, most often a cooked sugar syrup poured over egg yolks or Italian meringue. Smooth and stable, it fills and coats Yule logs, opera cakes and birthday cakes. The Swiss meringue version yields a lighter, less sugary texture prized for delicate finishes and piped decoration.
