Chaptalization


Chaptalization is the addition of sugar to the must before or during fermentation, in order to raise the wine's final alcohol level. The process takes its name from the French chemist Jean-Antoine Chaptal, who formalised it in the early nineteenth century. Common in cool regions where grapes struggle to ripen fully, it is tightly governed by European regulation, which limits its use and caps any increase in alcoholic strength.
