Charlotte
The charlotte is a moulded dessert lined with ladyfinger biscuits or sponge, filled with a bavarois, a mousse or a fruit cream, then unmoulded and served chilled. The cold Russian version, the charlotte russe, popularized in the early nineteenth century, differs from the oven-baked apple charlotte. Its cylindrical presentation makes it a classic piece on reception tables and dessert trolleys alike.
