Cognac


Cognac refers to a wine spirit double-distilled in Charentais pot stills within the delimited region around the town of Cognac, in the Charente. Aged in oak casks, it is graded by age statements such as VS, VSOP and XO. Its fruity, floral and woody palette makes it the base of historic cocktails such as the sidecar and the original sazerac, before the switch to rye whiskey.
