Couscous


Berber dish of the Maghreb made of hand-rolled durum wheat semolina steamed in several passes over a fragrant broth. The semolina is served with a stew of meat or fish, vegetables and chickpeas seasoned with spices. Inscribed on UNESCO's Intangible Heritage list, it traditionally gathers families and embodies North African cuisine in the palace hotels of the Maghreb.
