Dark chocolate


Dark chocolate refers to chocolate made from cocoa mass, cocoa butter and sugar, without added milk. Its cocoa content commonly ranges from 55 percent to more than 85 percent, a higher proportion signalling greater intensity, more bitterness and less sugar. Valued in pastry for its clean flavour and good structure, it reveals fruity, woody, spiced or roasted notes depending on the origin of the beans and the roast profile applied during manufacture.
