Détrempe
Détrempe refers to the mixture of flour, water and salt that forms the base of puff pastry, before the laminating butter is added. Kneaded only lightly so it stays supple and slack, it is later wrapped around the butter block during the first fold. The quality of the détrempe governs how evenly the layers form during lamination and how well the finished pastry rises when baked.
