Discreet clearing
Discreet clearing refers to the act of removing used plates, cutlery and glasses without noise or disturbance, once every guest at the same table has finished. The waiter clears from the right, stacks the pieces out of the diners' sight and leaves no cutlery lingering. A mark of refined houses, this gesture preserves the flow of the meal and respects the rhythm of conversation at the table.
