Echigo Toji

A guild of master brewers originating in Niigata Prefecture, one of Japan's three great toji guilds alongside the Nanbu and the Tanba. Masters of the light, dry tanrei karakuchi style, its members historically perfected the art of brewing in deep mountain snow. Their expertise shapes the signature of many Niigata sakes served in hospitality.
