Fill level

The fill level indicates the height of wine in an old bottle, revealing its state of preservation. The empty space beneath the cork, known as ullage, grows over time through slow evaporation across the cork. A high level, close to the shoulder, reassures on the seal; a low level betrays a failing cork and a risk of oxidation. Auction houses codify these levels to appraise fine and rare wines.
