Flemish carbonnade

Belgian beef stew braised in brown ale, emblematic of Flanders. The seared pieces cook slowly with onions, a slice of spiced bread spread with mustard and a dash of vinegar, the beer lending bitterness and depth. The result is a dark, bittersweet, glossy sauce served with fries or potatoes. It features in the Belgian regional cuisine reinterpreted by palace hotels.
