Fraisage
Fraisage refers to smearing small portions of dough across the work surface with the heel of the hand. This movement evenly blends butter and flour without toughening the dough, finishing a shortcrust or sweet pastry once the fat has been rubbed in. Performed only once or twice, it binds the ingredients while preserving the crumbly, short texture sought after baking in classic French pastry.
