Fruit jelly refers to a confection made by cooking fruit purée with sugar and pectin to a high concentration, then casting and cutting it. Pectin, naturally present in some fruits or added, ensures a firm set. Rolled in granulated sugar, the finished paste retains an intense fruit flavour. The Auvergne region around Clermont-Ferrand is a historic French production centre, where fruit jellies remain a signature regional confection tied to the local orchards.
