Ginjo-ka

The characteristic aromatic bouquet of ginjo and daiginjo sakes, delicately evoking apple, pear, melon or floral notes. It results from a slow low-temperature fermentation carried out with highly polished rice and carefully selected yeasts. A reliable marker of finesse, ginjo-ka guides the sommelier in identifying premium sakes and crafting delicate, precise pairings.
