Rinse


A rinse refers to coating the inside of a glass with a small amount of aromatic spirit or absinthe, the excess then being discarded. Only a faint film remains, perfuming the cocktail without dominating its profile. The Sazerac calls for an absinthe rinse, while the Vieux Carré and certain Martinis use a vermouth or liqueur rinse to shade the whole.
