Green harvest
Green harvest involves cutting away part of the still green bunches before ripening, generally around veraison. By deliberately reducing the crop load of an overly productive vine, this operation redirects sap to the remaining bunches, speeds and evens their ripening and concentrates sugars and aromas. Practised in quality vineyards, it serves as an adjustment when flowering has set a crop too abundant for the style the grower is seeking.
