Lacto-fermented syrup
A lacto-fermented syrup is a fruit or vegetable syrup whose sugar has been partly transformed by lactic bacteria, developing a complex acidity and umami notes. This preservation technique, borrowed from the kitchen, brings the bar a depth hard to achieve with a conventional syrup. It fits the movement of bars valuing fermentation and reduced waste.
