Lamination
Lamination refers to the repeated rolling and folding that stacks alternating layers of dough and butter within puff pastry. A single fold folds the dough in three, a double fold in four. After several turns, a classic puff pastry counts hundreds of thin layers. During baking, water in the dough turns to steam that the impermeable butter traps, producing the characteristic rise and flaky structure.
