Macaron


The macaron is a pastry made of two smooth shells based on ground almonds, sugar and whipped egg whites, sandwiched around a ganache, cream or jam filling. The Parisian version, known as the smooth macaron, prevailed over rustic regional macarons such as those of Nancy or Amiens. Its even foot, or collar, and its crisp shell mark the technical success of a well-executed batch.
