Madeleine

The madeleine is a small tender shell-shaped cake made from butter, eggs, sugar and flour, recognizable by the hump that forms from the thermal shock during baking. The town of Commercy in Lorraine claims its paternity in the eighteenth century, within the circle of Stanislas Leszczynski. Marcel Proust fixed the cake in literary memory at the beginning of the twentieth century.
