Marzipan


Marzipan refers to a malleable preparation of ground almonds and sugar, sometimes bound with glucose syrup and flavoured. The proportion of almonds determines quality: an almond-rich paste is finer and less sweet than a sugar-heavy one. Coloured and shaped, it serves for decoration and for modelling figurines, or forms the centre of confections. Lübeck marzipan, from Germany, is a renowned regional version protected for its high almond content and traditional craft.
