Mirror glaze


Mirror glaze refers to a glossy, smooth coating poured over a frozen entremets to give it a reflective finish. Made from sugar, glucose, gelatine and often chocolate, it is generally applied at around 35 degrees. Too warm, it melts the surface and slides off; too cold, it sets before it can cover the piece. Freezing the cake beforehand instantly fixes the layer against its cold surface.
