Mole poblano
Dark Mexican sauce originating in Puebla, regarded as an emblem of the national cuisine. It blends dried chiles (ancho, mulato, guajillo), chocolate, dried fruit and roughly two dozen spices, simmered for hours into a velvety reddish-brown texture. Traditionally served over poultry, it embodies pre-Hispanic and colonial fusion and features in the fine dining of Mexican palace hotels.
