Nanbu Toji

A guild of master brewers originating in Iwate Prefecture, one of Japan's three great toji guilds and reputedly the largest. Its members have spread their expertise to many breweries across the country, contributing to elegant and polished sakes. A toji's affiliation with this guild informs the sommelier of a sake's expected style.
