Neck wiping

Neck wiping is the gesture by which the sommelier cleans the rim of the bottle after removing the foil and the cork. It clears away traces of mould, deposit or cork dust that could taint the first drops poured. Carried out with a clean napkin just before pouring, it ensures the hygiene and cleanliness of the service. On champagnes, it also wipes away condensation and the neck once the wire cage has been taken off.
