Nose-to-tail is a cooking philosophy where chefs use every part of the animal, from premium cuts to lesser-known pieces like cheeks, tongue, sweetbreads, marrow, and tails. Popularized by London chef Fergus Henderson, this approach reduces waste and reflects deep respect for the animal. What this means for you as a diner: expect to see less familiar cuts on menus (heart, kidney, brain, offal) prepared with serious technique. If you're squeamish, ask the server before ordering. If you're adventurous, this is some of the most flavorful, rewarding eating you'll experience. Most nose-to-tail restaurants also serve more accessible cuts (beef, lamb chops) for those who prefer them. Often paired with whole-animal butchering classes at top venues.
