Oleo saccharum


Oleo saccharum, literally oil-sugar in Latin, is a syrup obtained by extracting the essential oils from citrus peels through the hygroscopic power of sugar. The peels macerate in sugar for several hours, until it dissolves into the released oils. A historic ingredient in classic punches, it delivers a citrus aromatic intensity that plain juice cannot match.
