Pairing by similarity seeks an echo between a dish and a wine that share common traits, aromas, texture or intensity, in order to extend a single sensation. A buttery roast fowl thus matches an oaked, full chardonnay, each reinforcing the other's richness. This logic of resonance stands opposite to contrast pairing and underpins many classic marriages found in restaurant sommellerie and tasting menus.
