Peated single malt

Peated single malt refers to a whisky from a single distillery, made from malted barley whose kilning over a peat fire infuses the grain with smoky compounds called phenols. Emblematic of the Scottish island of Islay, it unfolds aromas of smoke, iodine and medicine. In cocktails it is often used in small measures or as a glass rinse, where its aromatic power shapes creations such as the penicillin.
