Perigord truffle

The Perigord black truffle (Tuber melanosporum) is the most prestigious underground mushroom of French cuisine. Harvested from December to March in the truffle oak and hazel forests of the Perigord (Dordogne), Lot, Vaucluse, Drome and Quercy, it stands out for its powerful undergrowth perfume, musk aroma and black velvet colour. French production oscillates between 30 and 50 tonnes per year in 2026 depending on the weather, with a price range of 800 to 2,500 euros per kilo. Three star tables use it in season on pasta, eggs, poultry and truffles with foie gras (Source: French Truffle Growers Federation, 2026).
