Piping
Piping refers to shaping a soft mixture through a pastry bag fitted with a chosen nozzle, forcing the preparation out under steady pressure. The technique forms choux, macarons, meringues, eclairs and cream decorations with consistency. The choice of tip, plain or fluted, together with the pressure applied, determines the shape, volume and finished appearance of each piece laid out evenly across the baking tray.
