Plant-based fine dining is high-end vegetarian or vegan cuisine that rivals, and sometimes surpasses, traditional meat-based fine dining in technique and creativity. Notable examples include Eleven Madison Park in New York (fully plant-based since 2021) and L'Arpège in Paris (meat-free since 2001). What to expect: tasting menus of 8-15 courses, no animal products (or sometimes dairy and eggs only), creative use of fermentation, smoking, dehydration, and umami-rich ingredients like miso, mushrooms, and seaweed. Prices match traditional fine dining (150-400 EUR). Helpful for vegans, vegetarians, and people with religious dietary requirements, but call ahead to confirm strict vegan options. Many properties offer plant-based tasting menus alongside conventional ones.
