Rhum agricole


Rhum agricole refers to a rum distilled from freshly pressed sugarcane juice, known as vesou, rather than from molasses. The process yields pronounced grassy, vegetal aromatics that bartenders prize in the ti-punch and the daiquiri. Martinique has held an appellation d'origine contrôlée since a decree published in November 1996, which requires rapid fermentation of the juice and forbids hot extraction that would flatten the spirit's bouquet.
