Rubbing in


Rubbing in refers to working cold fat into flour until the mixture resembles sand, before any liquid is added. The butter coats the flour grains and restrains gluten development, ensuring the crisp, friable bite of shortcrust and sweet pastry. This step comes before the pastry is brought together, and stands in contrast to creaming, where butter and sugar are instead beaten to a light foam.
