Satay

Grilled skewers of Southeast Asia, originating in Java, Indonesia, and widespread in Malaysia, Singapore and Thailand. Thin strips of meat marinated in spices are threaded on bamboo sticks, charcoal-grilled and served with a peanut sauce, compressed rice (ketupat) and condiments. Fragrant and smoky, they belong to the repertoire of Southeast Asian cuisine served in palace hotels.
