Scraping down


Scraping down refers to carefully clearing the sides and bottom of a bowl with a plastic scraper or spatula, so that all of the preparation is recovered. The movement ensures no material is wasted and that the mixture stays homogeneous, with no unincorporated batter clinging to the edges. Routine in professional pastry, it keeps the work clean and the preparation even before it is piped, moulded or baked.
