Tableside cheese cutting refers to the technical gesture by which a maitre d'hotel portions each piece according to its shape, paste and rind, cutting slices that preserve the balance between centre and heel. A wire for soft cheeses, a lyre for blues and a two-handed knife for pressed varieties follow precise rules. This ritual accompanies the reasoned presentation of an aged selection, described by region and by milk.
