Tableside fruit flambe
Tableside fruit flambe refers to the preparation of fruit desserts set alight before the guest, such as bananas or pineapple cooked in butter and sugar then doused with a spirit the server ignites. The flame caramelises the sugars and burns off the alcohol, concentrating the aromas while offering a spectacular display. This service, performed over a burner on a rolling cart, demands controlled gestures and precise coordination between the cooking and the final plating.
