Tarte flambée
Speciality of Alsace and neighbouring Baden-Württemberg, made of a thin rolled dough topped with cream, onions and lardons, baked very quickly in a very hot oven until the edges char. Its Alsatian name, flammekueche, means flame cake, referring to wood-oven baking. Crisp and smoky, served to share, it illustrates the Upper Rhine regional cuisine of Alsatian palace hotels.
