Tokaj

Tokaj refers to a wine region in northeastern Hungary, celebrated for its sweet wines, the Tokaji Aszú, among the oldest dessert wines in the world. They are made from grapes affected by noble rot, Botrytis cinerea, which concentrates sugars and aromas into a honeyed richness. The dominant indigenous grapes are furmint and hárslevelű. The region also produces more than half of its output as dry white wines, increasingly esteemed abroad.
