The water ceremony refers to the service dedicated to mineral waters, presented through a menu detailing their mineral content, effervescence and geographic origin. An attendant, sometimes called a water sommelier, advises on the pairing between water and dishes, as one would for wine. The water is served in a dedicated glass at a controlled temperature, this ritual celebrating the diversity of sources and the precision of service in high-end establishments.
